Rainy Day Muffins

Rainy days at the shore. Not so much fun, right? They definitely can be very boring and throw a wrench in your vacation. Yesterday, I weighed my options of what I could do because sitting on the beach was out of the question. Nap? Catch up on some TV shows? Board games with the family? But I actually decided to bake!

I love, love to cook/bake! My Pinterest recipe boards have been growing (You can follow me on pinterest!) and growing, so this was a perfect chance to try out a new recipe. And the recipe I decided on, drum roll please.....Honey Coconut Blueberry Bran Muffins from Skinnytaste.com. The website is full of recipes that look fantastic!

So I grabbed my ingredients...

and my bright colored bowls and was ready to make me some muffins!

Here's what you'll need:
*Preheat oven to 400°F.

  • 1 cup wheat bran
  • 1-1/2 cups white whole wheat flour
  • 1/3 cup sweetened shredded coconut
  • 1/4 cup chopped walnuts
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup unsweetened vanilla almond milk (or skim is fine)  I used soy milk!
  • 1/2 cup honey
  • 1 tsp vanilla
  • 3/4 cup unsweetened applesauce
  • 2 tbsp coconut oil (or canola)
  • 2 large eggs, beaten

1) Combine the wheat bran, wheat flour, baking soda and baking powder. Stir in nuts and coconut.


2) In a separate bowl, blend applesauce, almond milk, honey, coconut oil, vanilla and egg.  Add to dry ingredients and stir just until moistened. Fold in blueberries.

3) Spoon into muffin cups and bake for 18-20 minutes, or until a toothpick inserted comes out clean.






The recipe said that it would make 16 regular sized muffins. I actually made 12 regular sized and 12 mini muffins (Obviously, the baking time is a bit shorter, around 10 minutes, for the mini muffins). And the taste test? DELICIOUS! My family loved them and I've noticed that more muffins continue to disappear from the tin. They are healthy, low in calories, tasty and easy to make! You can't beat that! I will definitely make them again!
